Description

The morning will hate to see you coming after a fruit and fibre-filled brekky bar.

Ingredients
  • 4-5 ripe bananas (mashed with a fork)
  • 3 cups rolled oats
  • ¼ cup flax seeds
  • ¼ cup chopped dates (currants or walnuts)
  • 2 eggs
  • cup dark brown sugar
  • 1 cup yoghurt
  • ½ cup milk
  • 1 tsp cinnamon
  • ¼ cup cocoa powder
  • 1 tsp vanilla extract
Instructions
  1. Prep your bananas then measure all ingredients into a large mixing bowl. Using a large spoon or spatula mix well until everything is evenly coated.
  2. Spread evenly into a large non-stick or baking paper-lined roasting pan and bake for 30-40 mins or until browning at the edges.
  3. Rest to cool completely then slice.
  4. Store in the fridge for up to a week or freezer for up to three months. Bring back to room temp before serving. 

    You can eat them cold from the fridge but the flavour is not as nice.
